Beatrice Ruggeri, known simply as Bice, learned the language of hospitality early. In her family's Tuscan home, she cooked daily for her nine siblings, guided by intuition, care, and an understanding that meals are meant to bring people together.
When she opened Bice Ristorante in 1926, she did so without ambition for expansion or recognition. What she established instead was something more enduring: a way of welcoming guests rooted in warmth, attentiveness, and authenticity. Through her cooking and her presence, Bice shaped values that continue to define Bice Ristorante today

Each location reflects the spirit of its city while remaining unmistakably Bice, each one carrying the same warmth and care that has defined Bice for a century.
